Crispy Air Fryer Taco-Stuffed Mini Peppers

12 mini sweet peppers, halved and seeds removed

1 cup ground beef (or ground turkey for a lighter option)

1 tablespoon taco seasoning (store-bought or homemade)

1/2 cup canned black beans, drained and rinsed

1/2 cup corn (canned, frozen, or freshly cooked)

1/2 cup shredded cheese (cheddar or a Mexican cheese blend)

1/4 cup diced tomatoes (fresh or canned)

1/4 cup finely chopped red onion

1 tablespoon olive oil

Salt and pepper, to taste

Optional toppings: sour cream, diced avocado, sliced jalapeños, and fresh cilantro for garnish

Instructions
 

Prepare the Filling:

    In a medium skillet over medium heat, add the ground beef (or turkey). Cook, breaking it apart with a spatula, for about 5-7 minutes, until it’s evenly browned. If necessary, drain any excess fat from the skillet.

      Season the Meat:

        Stir the taco seasoning into the cooked meat, then add in the black beans, corn, diced tomatoes, and chopped red onion. Cook for an additional 2-3 minutes, allowing the flavors to blend together. Season the mixture with salt and pepper to taste.

          Prepare the Peppers:

            Preheat the air fryer to 350°F (175°C). While the air fryer is heating up, take the halved mini sweet peppers and lightly brush or spray the insides with olive oil to enhance crispiness.

              Stuff the Peppers:

                Using a spoon, fill each halved mini pepper generously with the taco meat mixture. Once filled, top each pepper with a sprinkle of shredded cheese.

                  Air Fry the Peppers:

                    Arrange the stuffed mini peppers in the air fryer basket in a single layer. Air fry for about 10-12 minutes, or until the peppers are tender and the cheese is melted, bubbly, and slightly golden.

                      Serve:

                        Carefully remove the peppers from the air fryer using tongs. Optionally, top them with sour cream, diced avocado, sliced jalapeños, and a sprinkle of fresh cilantro for garnish. Serve while hot and enjoy your delicious creation!
