Ingredients

2 large chicken breasts, butterflied and pounded to 1/2 inch thick

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Cooking spray (for air fryer)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Start by butterflying the chicken breasts to ensure even cooking. Place each breast between two pieces of plastic wrap and gently pound with a meat mallet until they reach a thickness of about 1/2 inch.

Set Up Breading Station: Create a breading assembly line by placing three shallow dishes side by side. Fill the first dish with all-purpose flour, beat the eggs in the second dish, and in the third dish combine panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.

Bread the Chicken: Take each chicken cutlet and first coat it in the flour, shaking off any excess. Next, submerge the cutlet in the beaten eggs, allowing any excess to drip back into the dish. Finally, press the chicken into the panko breadcrumb mixture, ensuring an even coating for maximum crunch.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for approximately 5 minutes to prepare for cooking.

Air Fry the Chicken: Lightly spray the air fryer basket with cooking spray to prevent sticking. Arrange the breaded chicken cutlets in a single layer within the basket, ensuring they do not touch. For extra crispiness, lightly spray the tops of the cutlets with additional cooking spray.

Cook to Perfection: Air fry the chicken cutlets for 10-12 minutes, flipping them halfway through the cooking time. They should develop a beautiful golden brown exterior and reach an internal temperature of 165°F (74°C) for safe consumption.

Serve: Carefully take the chicken cutlets out of the air fryer and let them rest for a couple of minutes to maintain juiciness. Finely chop some fresh parsley and sprinkle it over the top for a vibrant finishing touch. These cutlets pair well with your favorite dipping sauce or can be served alongside a refreshing side salad.
