4 cups seedless watermelon, cut into cubes

1 cup feta cheese, crumbled

1 cup Greek yogurt (choose plain or vanilla based on preference)

2 tablespoons honey (adjust according to your desired sweetness)

1 tablespoon fresh lime juice

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare Watermelon: Start by placing the cubed watermelon in a blender. Blend on high until the mixture is completely smooth. For an extra silky texture, strain the blended watermelon through a fine mesh sieve to remove any pulp.

    Make the Creamy Mixture: In a medium mixing bowl, combine the crumbled feta cheese, Greek yogurt, honey, and lime juice. Using either a fork or a food processor, mix until the ingredients are well-integrated and creamy. Taste the mixture and add more honey if a sweeter flavor is preferred.

      Layer the Pops: Take your popsicle molds and pour in the blended watermelon, filling each mold about one-third of the way. After pouring, gently tap the molds on the countertop to release any air bubbles for a smoother finish.

        Add Feta Cream Layer: Using a spoon, carefully add the creamy feta mixture on top of the watermelon layer, filling the molds another one-third of the way. To create a marbled effect, you may use a knife or skewer to lightly swirl the feta mixture into the watermelon, but be sure not to overmix.

          Finish with Watermelon Layer: Top off each mold with the remaining watermelon blend, ensuring each one is filled to the top. If desired, use a skewer to gently swirl the very top layer for an attractive blended look.

            Insert Sticks: Take the wooden popsicle sticks and insert them into the molds. Make sure they are deep enough to stay upright but avoid pushing them down so far that they touch the bottom layer.

              Freeze: Place the molds in the freezer and allow them to freeze for at least 4-6 hours, or until they are completely solid.

                Unmold Pops: Once fully frozen, run warm water over the outside of the molds for a few seconds to help loosen the popsicles. Gently pull each popsicle out, being careful to maintain their formed shape.
