Creamy Tuscan Shrimp Linguine

8 oz linguine

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Cook the Linguine: Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente, typically around 8-10 minutes. Once done, reserve 1 cup of the pasta water for later use, then drain the linguine and set aside.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. When the oil is hot, add the peeled and deveined shrimp, seasoning them with salt and pepper. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove the cooked shrimp from the skillet and place them on a plate to keep warm.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds, or until it becomes fragrant but not browned. Next, add the halved cherry tomatoes and continue to cook for 2-3 minutes, allowing them to soften and release their juices.

        Incorporate Spinach and Cream: Stir in the fresh spinach and cook until it wilts, which should take about 1-2 minutes. Then, reduce the heat to low and pour in the heavy cream, stirring to combine. Allow the mixture to simmer gently for about 2-3 minutes.

          Combine Ingredients: Gradually add the grated Parmesan cheese and Italian seasoning to the sauce, stirring continuously until the cheese has melted and the sauce has thickened to your liking. If the sauce appears too thick, gradually incorporate some of the reserved pasta water until you achieve your desired consistency.

            Mix in Linguine and Shrimp: Add the cooked linguine and sautéed shrimp to the creamy sauce. Gently toss everything together to ensure the pasta and shrimp are coated evenly with the sauce. Heat through for an additional 2 minutes.
