Ingredients

4 salmon fillets (approximately 6 oz each)

Salt and freshly ground black pepper, to taste

2 tablespoons extra virgin olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning blend

1/2 teaspoon red pepper flakes (optional, for heat)

Fresh basil leaves, for garnish

Instructions

Prepare the Salmon: Begin by seasoning both sides of the salmon fillets with salt and freshly ground black pepper. This will enhance the flavor of the fish.

Sear the Salmon: In a large skillet, heat the extra virgin olive oil over medium-high heat. Once the oil is shimmering, carefully add the salmon fillets skin-side down. Sear them for about 5 minutes, or until the skin is nicely golden and crispy. Flip the fillets and cook for an additional 2-3 minutes, or until the salmon is cooked through (it should flake easily with a fork). Remove the salmon from the skillet and set aside on a warm plate.

Make the Sauce: In the same skillet, reduce the heat slightly and add the minced garlic. Sauté for about 30 seconds, stirring continuously until the garlic is fragrant but not browned. Next, add the halved cherry tomatoes, cooking for about 3-4 minutes, or until they begin to soften and release their juices.

Add the Spinach: Stir in the chopped spinach, cooking for an additional minute until just wilted. The vibrant color of the spinach will add freshness to your dish.

Create the Creamy Base: Lower the heat to medium-low. Slowly pour in the heavy cream, stirring to combine with the other ingredients. Gradually add the grated Parmesan cheese and Italian seasoning, stirring continuously until the cheese melts and the sauce thickens slightly. Taste and adjust seasoning with salt, pepper, and red pepper flakes for added spice if desired.

Combine Everything: Carefully return the seared salmon fillets to the skillet, spooning some of the creamy sauce over the top. Allow the salmon to simmer gently in the sauce for 2-3 minutes, just until warmed through.

Serve: Garnish with fresh basil leaves for a burst of color and flavor. This creamy Tuscan salmon can be served elegantly over a bed of pasta, fluffy rice, or alongside a slice of crusty bread to soak up the delicious sauce. Enjoy your culinary masterpiece!
