Creamy Tomato Basil Soup and Grilled Cheese

For the Creamy Tomato Basil Soup:

2 tablespoons olive oil

1 medium onion, finely diced

3 cloves garlic, minced

2 (14.5 oz) cans of diced tomatoes (with juice included)

1 cup vegetable broth

1 cup heavy cream

1 tablespoon sugar (optional, to balance the acidity)

Salt and pepper to taste

1 teaspoon dried oregano

1/2 cup fresh basil leaves, chopped (plus extra for garnish)

For the Grilled Cheese:

4 slices of your preferred bread (sourdough or whole grain recommended)

4 slices of cheddar cheese (or your cheese of choice)

2 tablespoons butter, softened

Instructions
 

Prepare the Soup:

    - In a large pot, heat the olive oil over medium heat. Add the finely diced onion and sauté for about 5 minutes, or until it becomes translucent and soft.

      - Stir in the minced garlic and sauté for an additional minute until it releases its fragrant aroma.

        - Pour in the diced tomatoes (along with their juice) and add the vegetable broth, sugar (if using), dried oregano, and a pinch of salt and pepper. Bring the mixture to a gentle simmer.

          - Once simmering, reduce the heat and let the soup simmer for 20 minutes, stirring occasionally to prevent sticking.

            - After simmering, remove the pot from heat and stir in the heavy cream and chopped fresh basil. Using an immersion blender, blend the soup until smooth and creamy. (If using a regular blender, transfer the soup in batches and blend carefully.) Adjust the seasoning to taste.

              - Return the blended soup to the stove on low heat to keep it warm while you prepare the grilled cheese sandwiches.

                Make the Grilled Cheese:

                  - Preheat a skillet over medium heat. Spread softened butter evenly over one side of each slice of bread.

                    - Place two slices of bread, buttered side down, onto the heated skillet. Top each slice with two slices of cheese.

                      - Close the sandwiches with the remaining slices of bread, ensuring the buttered sides are facing up.

                        - Cook for about 3-4 minutes or until the bottom is golden brown. Carefully flip the sandwiches and cook the opposite side until it is also golden and the cheese is melted (about another 3-4 minutes).

                          - Once cooked, remove from the skillet and let the sandwiches cool for a minute before slicing them diagonally for easier handling.

                            Serve:

                              - Ladle the creamy tomato basil soup into deep bowls. Garnish with additional fresh basil leaves for a pop of color and extra flavor. Serve the soup hot alongside the freshly grilled cheese sandwiches for a delightful, comforting meal.
