1 lb (450g) potato gnocchi

1 cup sun-dried tomatoes, chopped (preferably oil-packed)

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons extra virgin olive oil

2 cloves garlic, minced

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and freshly ground black pepper to taste

Fresh basil leaves for garnish

Additional grated Parmesan for serving

Cook the Gnocchi: In a large pot, bring salted water to a vigorous boil. Carefully add the potato gnocchi, cooking according to the package instructions, usually around 2-3 minutes, or until the gnocchi rise to the surface. Once cooked, drain them well and set aside.

    Sauté the Aromatics: In a sizable skillet, warm the extra virgin olive oil over medium heat. Add the minced garlic, sautéing for about 1 minute, or until fragrant and translucent, taking care not to let it brown.

      Incorporate Sun-Dried Tomatoes: Add the chopped sun-dried tomatoes to the skillet, stirring to combine. Cook for an additional 2-3 minutes, allowing the tomatoes to release their flavors into the oil.

        Create the Creamy Sauce: Reduce the heat slightly, then pour in the heavy cream. Stir until well combined with the tomatoes and oil. Incorporate the grated Parmesan cheese, dried basil, and red pepper flakes (if you enjoy a bit of heat). Mix thoroughly and let the sauce simmer gently on low heat for about 5 minutes, allowing it to thicken slightly.

          Combine Gnocchi with Sauce: Gently add the cooked gnocchi to the sauce, folding them in with care to coat them evenly.
