12 oz (340 g) rigatoni or penne pasta

1 tablespoon olive oil

3 cloves garlic, minced

1 medium onion, diced

5 oz (140 g) fresh spinach (or 10 oz frozen spinach, thawed and drained)

15 oz (425 g) ricotta cheese

1 cup (240 ml) heavy cream

1 cup (100 g) grated Parmesan cheese, divided

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional, for added heat)

Salt and pepper to taste

1 cup (100 g) shredded mozzarella cheese

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the right temperature while you prepare the pasta bake.

    Cook the Pasta: In a large pot, bring salted water to a vigorous boil. Add the rigatoni or penne pasta and cook according to package instructions until al dente. Drain the pasta in a colander and set aside.

      Sauté the Vegetables: Heat the olive oil in a large skillet over medium heat. Once hot, add the diced onion and minced garlic. Sauté for about 3-4 minutes, stirring occasionally, until the onion becomes translucent and fragrant.

        Add Spinach: Stir in the fresh spinach, cooking it briefly until wilted, which should take about 2-3 minutes. If using frozen spinach, add it now and cook until it is heated through. Season the mixture with salt, pepper, and red pepper flakes for a touch of heat, if desired.

          Mix the Cheese: In a large mixing bowl, combine the ricotta cheese, heavy cream, half of the grated Parmesan cheese (½ cup), Italian seasoning, and a little extra salt and pepper. Whisk until the mixture is smooth and well combined.
