8 oz (225g) fettuccine or spaghetti

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) cremini or button mushrooms, sliced

4 cups fresh spinach, roughly chopped

1 cup (240ml) heavy cream

1/2 cup (120ml) vegetable broth

1/2 cup (50g) grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil or parsley, for garnish (optional)

Instructions
 

Cook the Pasta: Fill a large pot with salted water and bring it to a rolling boil. Add the fettuccine or spaghetti, cooking according to the package instructions until al dente. Before draining, reserve 1 cup of the starchy pasta water to help adjust the sauce later. Drain the pasta and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes, stirring occasionally, until it becomes translucent and tender. Incorporate the minced garlic and cook for an additional minute, or until the garlic is fragrant but not browned.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are golden brown and their moisture has evaporated, allowing them to develop a rich flavor.
