1 lb (450g) cherry tomatoes

3 tablespoons olive oil

Salt and freshly ground black pepper, to taste

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for heat)

1 cup heavy cream

1/2 cup grated Parmesan cheese, plus extra for serving

12 oz (340g) pasta of choice (penne or fettuccine works wonderfully)

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven:

    Begin by preheating your oven to 400°F (200°C) to ensure it's hot and ready for roasting the tomatoes.

      Roast the Tomatoes:

        In a large mixing bowl, combine the cherry tomatoes with 2 tablespoons of olive oil, season generously with salt and freshly ground black pepper. Add the minced garlic, dried oregano, dried basil, and red pepper flakes (if you’re adding heat). Toss everything together until the tomatoes are well-coated. Spread the seasoned tomatoes evenly on a baking sheet. Roast in the preheated oven for approximately 20-25 minutes, or until they are blistered and beginning to burst, releasing their delicious juices.

          Cook the Pasta:

            While the tomatoes are roasting, bring a large pot of salted water to a rolling boil. Add your choice of pasta and cook it according to package directions until al dente. Once cooked, reserve about 1 cup of the starchy pasta water, then drain the pasta.
