Ingredients

2 pounds Yukon Gold potatoes, peeled and cubed

1 bulb of garlic

1/4 cup unsalted butter

1 cup heavy cream (or milk for a lighter option)

1/2 cup sour cream

Salt, to taste

Freshly cracked black pepper, to taste

Fresh chives or parsley, finely chopped (for garnish)

Instructions

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Carefully slice the top off the garlic bulb to expose the individual cloves. Drizzle with a touch of olive oil, wrap tightly in aluminum foil, and place it in the oven. Roast for approximately 30-35 minutes, or until the cloves are soft and golden-brown with a caramelized aroma. Once done, allow it to cool slightly before handling.

        Cook the Potatoes:

          - In a large pot, place the cubed Yukon Gold potatoes and cover them with cold water. Add a good pinch of salt to the water.

            - Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to a gentle simmer and cook for about 15-20 minutes, or until the potatoes are fork-tender when pierced.

              Prepare the Creamy Mixture:

                - In a small saucepan, combine the unsalted butter and heavy cream (or milk). Place over low heat and gently warm until the butter has melted and the mixture is hot but not boiling.

                  - Carefully squeeze the roasted garlic cloves out of their skins into the cream and butter mixture. Stir well to blend them together into a fragrant and creamy consistency.

                    Mash the Potatoes:

                      - Once the potatoes are cooked, drain them thoroughly and return them to the pot. Use a potato masher or ricer to mash the potatoes until they reach your desired smoothness.

                        - Gradually pour in the warm garlic cream mixture and then add the sour cream. Mix thoroughly until the mashed potatoes are creamy, fluffy, and well incorporated.

                          Season:

                            - Taste your mashed potatoes and season generously with salt and freshly cracked black pepper to enhance flavor. If you prefer a richer texture, feel free to add more cream or a knob of butter until you achieve your desired creaminess.

                              Serve:

                                - Transfer your divine roasted garlic mashed potatoes into a serving bowl. For a colorful flourish, garnish with freshly chopped chives or parsley. Serve warm alongside your favorite entrees for a comforting addition to any meal.
