Ingredients

12 oz fettuccine pasta

1 cup canned pumpkin puree (ensure it's not pumpkin pie filling)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup unsalted butter

3 cloves garlic, minced

1 teaspoon ground nutmeg

1 teaspoon ground cinnamon

Salt and freshly ground black pepper, to taste

Fresh parsley, finely chopped (for garnish)

Optional: crispy pancetta or bacon bits for topping

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to the package instructions until al dente. Before draining, reserve about 1 cup of the pasta cooking water. Drain the pasta and set it aside, keeping it warm.

Prepare the Alfredo Sauce: In a large skillet, melt the unsalted butter over medium heat. Once melted, add the minced garlic and sauté for approximately 1 minute, or until it becomes fragrant (be careful not to let it brown).

Incorporate Pumpkin and Cream: Stir in the pumpkin puree and heavy cream, mixing thoroughly to combine. Allow the mixture to simmer gently for about 5 minutes, which helps the flavors to blend beautifully.

Season the Sauce: To the skillet, add the grated Parmesan cheese, ground nutmeg, ground cinnamon, salt, and black pepper. Stir continuously until the cheese melts into the sauce, creating a velvety texture. If the sauce seems too thick, gradually add the reserved pasta water, stirring until you achieve your desired creamy consistency.

Combine Pasta and Sauce: Introduce the cooked fettuccine to the skillet with the creamy pumpkin sauce. Toss the pasta gently but thoroughly to ensure each strand is well-coated with the sauce.

Serve: Spoon the creamy pumpkin Alfredo pasta onto plates while it's warm. For an appealing presentation, garnish with extra grated Parmesan cheese, fresh chopped parsley, and if desired, sprinkle crispy pancetta or bacon bits on top for added flavor and texture.

Enjoy: Serve immediately and savor the delightful, comforting flavors of this creamy pumpkin Alfredo pasta dish!
