Creamy Peach Soup

4 ripe peaches, peeled and pitted

1 cup coconut milk

1 cup vegetable broth

1 tablespoon honey or maple syrup (adjust to taste)

1 tablespoon fresh lime juice

1 teaspoon fresh ginger, grated (optional)

Salt and pepper to taste

Fresh mint leaves, for garnish

1 tablespoon olive oil (for sautéing)

1 small onion, finely chopped

2 cloves garlic, minced

Instructions
 

In a medium-sized pot, heat the olive oil over medium heat until it shimmers. Add the finely chopped onion and sauté for about 5 minutes, or until the onion becomes soft and translucent.

    Add the minced garlic and grated ginger (if using) to the pot. Stir frequently for approximately 1 minute, or until the mixture is fragrant and the garlic begins to soften.

      Slice the peeled peaches into wedges and add them to the pot. Cook for about 3-4 minutes, stirring occasionally, until the peaches start to soften and release their juices.

        Pour in the vegetable broth and bring the mixture to a gentle simmer. Allow it to cook for about 10 minutes, or until the peaches are fully tender.

          Remove the pot from heat and let it cool slightly for safety. Using an immersion blender or a countertop blender, puree the mixture until it is completely smooth and creamy.

            Stir in the coconut milk, honey (or maple syrup), and fresh lime juice. Blend once more until everything is fully incorporated. Taste and adjust the seasoning with salt and pepper as needed.
