Creamy Orzo with Mushrooms and Spinach

1 cup orzo pasta

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

8 ounces mushrooms, sliced (preferably cremini or button)

4 cups fresh spinach, roughly chopped

3 cups vegetable or chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Orzo: Fill a large pot with water, add a generous pinch of salt, and bring to a rolling boil. Once boiling, add the orzo and cook according to the package directions until al dente. Once cooked, drain the orzo and set it aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion, and sauté for about 3-4 minutes until it becomes translucent and soft. Then, stir in the minced garlic and cook for another 30 seconds until fragrant.

      Add the Mushrooms: Introduce the sliced mushrooms to the skillet. Cook for approximately 5-7 minutes, stirring occasionally, until the mushrooms are tender and beautifully golden brown.

        Incorporate Spinach: Add the roughly chopped fresh spinach to the skillet, stirring frequently until the leaves are wilted, which should take about 2 minutes.

          Create the Creamy Sauce: Carefully pour in the vegetable or chicken broth and bring the mixture to a gentle simmer. Once simmering, reduce the heat to low and stir in the heavy cream, dried thyme, salt, and black pepper.
