Ingredients

1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

12 oz (340g) fettuccine pasta

4 cups (960ml) low-sodium chicken broth

1 cup (240ml) heavy cream

1 cup (100g) finely grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon extra virgin olive oil

1 teaspoon Italian seasoning blend

Salt and freshly ground black pepper, to taste

Fresh parsley, finely chopped (for garnish)

Instructions

Sauté the Chicken: In a large pot or deep skillet, heat the olive oil over medium-high heat. Add the diced chicken, seasoning it generously with salt, pepper, and the Italian seasoning. Sauté for about 5-7 minutes, turning occasionally, until the chicken is golden brown and cooked through. Once done, remove the chicken from the pot and set it aside on a plate.

Sauté the Garlic: In the same pot, lower the heat to medium. Add the minced garlic and sauté for about 1 minute, stirring frequently, until it becomes fragrant. Be careful not to let the garlic burn, as this will affect the flavor.

Cook the Pasta: Pour in the chicken broth and bring it to a rolling boil. Once boiling, stir in the fettuccine pasta. Reduce the heat to medium-low and let it simmer for approximately 10 minutes, stirring occasionally. This will allow the pasta to cook al dente and enable most of the broth to be absorbed.

Make it Creamy: After the pasta is cooked, stir in the heavy cream and the grated Parmesan cheese. Mix well until the cheese melts and the sauce is smoothly integrated. Allow it to simmer for an additional 2-3 minutes to slightly thicken the sauce.

Combine: Return the sautéed chicken to the pot, stirring until all the ingredients are well combined and the chicken is heated through. Taste and adjust the seasoning with more salt and pepper if needed.

Serve: Plate the creamy chicken alfredo pasta in individual servings. Garnish with a generous sprinkle of freshly chopped parsley for a burst of color and freshness. Enjoy your delicious one-pot meal!
