Ingredients
  

12 lasagna noodles

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (button, cremini, or any variety you prefer)

5 oz (140g) fresh spinach

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 cups ricotta cheese

1 large egg

1 cup grated Parmesan cheese, divided

2 cups shredded mozzarella cheese

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Lasagna Noodles:

    - In a large pot, bring salted water to a rolling boil. Carefully add the lasagna noodles and cook them according to the package instructions until al dente. Once done, drain the noodles and set them aside on a clean kitchen towel to prevent them from sticking.

      Prepare the Mushroom Spinach Filling:

        - Heat olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté until it becomes translucent, approximately 5 minutes.

          - Add the minced garlic and sliced mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms have released their moisture and turned golden brown, about 8-10 minutes.

            - Incorporate the fresh spinach, dried oregano, dried basil, salt, and pepper into the mixture, cooking until the spinach wilts, around 2-3 minutes. Remove the skillet from heat and allow the filling to cool slightly.

              Mix the Cheese Filling:

                - In a mixing bowl, combine the ricotta cheese, large egg, ½ cup of grated Parmesan cheese, a pinch of salt, and a pinch of pepper. Blend the ingredients together thoroughly until the mixture is smooth and creamy.

                  Assemble the Lasagna:

                    - Preheat your oven to 375°F (190°C).

                      - At the bottom of a 9x13 inch baking dish, spread a thin layer of marinara sauce.

                        - Arrange three lasagna noodles over the sauce in a single layer.

                          - Evenly spread half of the ricotta cheese mixture over the noodles, followed by half of the mushroom and spinach filling. Sprinkle ⅓ of the shredded mozzarella cheese on top.

                            - Repeat the layering process with three more noodles, the remaining ricotta mixture, the remaining mushroom and spinach filling, and another ⅓ of mozzarella cheese.

                              - At the top, place the last three lasagna noodles, cover them with the remaining marinara sauce, and finish with the remaining mozzarella cheese and grated Parmesan cheese.

                                Bake the Lasagna:

                                  - Cover the baking dish with aluminum foil (for easier removal, lightly spray the foil with cooking spray). Bake in the preheated oven for 25 minutes.

                                    - After 25 minutes, carefully remove the foil and continue to bake for an additional 15-20 minutes, until the cheese is bubbling and golden brown.

                                      Cool and Serve:

                                        - Once finished baking, remove the lasagna from the oven and let it cool for about 10 minutes before slicing. This resting period allows the layers to set and makes serving easier.

                                          - Garnish with fresh basil leaves if desired. Serve warm and enjoy!
