1 cup freshly squeezed lemon juice (approximately 4-6 medium lemons)

1 cup sweetened condensed milk

1 cup whole milk (or substitute with coconut milk for a dairy-free version)

1/2 cup water

1/2 cup granulated sugar (adjust to your taste preference)

1 teaspoon vanilla extract

Zest of 2 lemons

A pinch of salt

Optional garnishes: thin lemon slices, fresh mint leaves

Prep the Ingredients: Begin by thoroughly washing the lemons. Juice the lemons until you have 1 cup of fresh lemon juice. Next, zest 2 lemons, ensuring to only collect the bright yellow outer layer, and set the zest aside for later use.

    Mix the Base: In a medium mixing bowl, combine the freshly squeezed lemon juice, sweetened condensed milk, whole milk (or coconut milk), and water. Use a whisk or spoon to stir the mixture until it is fully blended and smooth.

      Sweeten the Mix: Gradually incorporate the granulated sugar into the lemon mixture, stirring constantly until the sugar has completely dissolved. Taste the mixture and adjust the sweetness by adding more sugar, if desired.

        Add Flavor: Next, integrate the vanilla extract, reserved lemon zest, and a pinch of salt into the mixture. Stir thoroughly to ensure all the flavors are well combined.

          Fill the Molds: Carefully pour the creamy lemon mixture into popsicle molds, filling each mold almost to the top. Be sure to leave a small amount of space at the top to allow for expansion as they freeze.

            Insert Sticks: Place popsicle sticks into each mold. If you're using a block-style mold, it may help to freeze the mixture for about 30 minutes first. This will allow the sticks to remain upright while the popsicles freeze.

              Freeze: Transfer the filled molds to the freezer and freeze for a minimum of 6 hours, or until the pops are completely solid.

                Unmold and Serve: To release the pops, briefly run warm water over the outside of the molds for a few seconds. This will help loosen the pops. Gently pull them out and serve immediately. For an elegant presentation, garnish with a thin slice of lemon or a sprig of fresh mint on top.
