Ingredients

4 bone-in, skin-on chicken thighs

Salt and freshly ground black pepper, to taste

2 tablespoons extra virgin olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup low-sodium chicken broth

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon red pepper flakes (optional, for added spice)

Fresh parsley, finely chopped (for garnish)

Instructions

Prepare the Chicken: Begin by patting the chicken thighs dry with paper towels, ensuring they are free from excess moisture. Generously season both sides with salt and freshly ground black pepper to enhance the flavor.

Sear the Chicken: Heat a large skillet over medium-high heat and add the olive oil. Once the oil is hot and shimmering, carefully place the chicken thighs in the skillet, skin-side down. Sear them for approximately 5-7 minutes, or until the skin turns a deep golden brown and becomes crispy. Flip the thighs and continue cooking for an additional 5 minutes. Once finished, remove the chicken thighs from the skillet and set them aside on a plate.

Sauté Garlic: In the same skillet, lower the heat to medium and add the minced garlic. Sauté the garlic for about 30 seconds, stirring constantly, until it becomes fragrant but be cautious to avoid burning it.

Make the Sauce: Pour in the chicken broth while scraping up any browned bits stuck to the bottom of the skillet. Allow the broth to simmer for about a minute. Next, reduce the heat to low and gently stir in the heavy cream followed by the freshly grated Parmesan cheese. Stir the mixture until the cheese fully melts and the sauce becomes rich and creamy. Incorporate the Italian seasoning and red pepper flakes if you desire a bit of heat.

Combine and Cook: Return the seared chicken thighs to the skillet, placing them skin-side up. Use a spoon to pour some of the creamy sauce over the chicken to ensure it gets well-coated. Cover the skillet with a lid and let the chicken cook in the sauce for approximately 15-20 minutes, or until the internal temperature reaches 165°F (75°C).

Serve: Once the chicken is cooked through, remove the lid and garnish the dish with freshly chopped parsley for a pop of color. Serve the chicken thighs drizzled with the luscious creamy garlic Parmesan sauce. This dish pairs beautifully with fluffy mashed potatoes or a crisp green salad for a complete meal.
