1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

1 cup fresh baby spinach

Fresh parsley, finely chopped (for garnish)

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the rotini pasta and cook according to the package instructions until al dente. Once done, drain the pasta and set it aside.

    Sauté the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is hot, carefully add the cubed chicken. Season with salt and pepper.
