2 tablespoons olive oil

1 lb (450 g) chicken breast, sliced into strips

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

1 cup (240 ml) heavy cream

1 cup (about 100 g) fresh spinach, packed

½ cup (50 g) grated Parmesan cheese

1 tablespoon lemon juice

Fresh parsley, chopped for garnish

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Once boiling, add the fettuccine (or pasta of your choice) and cook according to the package instructions until al dente. Before draining, reserve ½ cup of the pasta water to use later. Drain the pasta and set it aside.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. While the oil heats, season the sliced chicken strips generously with salt and black pepper. Once the oil is hot and shimmering, add the chicken to the skillet. Sauté the strips for about 6-8 minutes, or until they are golden brown and cooked through. Remove the cooked chicken from the skillet and transfer it to a plate, setting it aside for later.

      Sauté the Garlic: In the same skillet, reduce the heat to medium. Add the minced garlic and red pepper flakes to the hot oil. Sauté the mixture for about 1 minute, stirring frequently, until the garlic becomes fragrant but is not browned, as burnt garlic can taste bitter.

        Make the Cream Sauce: Carefully pour the heavy cream into the skillet, stirring to incorporate it with the garlic. Bring the mixture to a gentle simmer.
