Creamy Garlic Chicken and Broccoli Skillet

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 cups broccoli florets, fresh or frozen

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth, low-sodium preferred

1 cup shredded mozzarella cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Prepare the Chicken: Start by seasoning your sliced chicken breasts with salt, pepper, and Italian seasoning. Make sure each piece is evenly coated for the best flavor.

    Sauté the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the seasoned chicken. Cook for approximately 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. The internal temperature should reach 165°F (75°C). Once done, remove the chicken from the skillet and set aside on a plate.

      Cook the Broccoli: In the same skillet, introduce the broccoli florets along with a splash of chicken broth (about 2 tablespoons). Sauté the broccoli for about 3-4 minutes, stirring occasionally, until it's bright green and tender-crisp. Once done, remove the broccoli from the skillet and set aside with the chicken.

        Make the Creamy Sauce: Reduce the heat to medium and add the minced garlic to the empty skillet. Sauté for about 1 minute until the garlic is fragrant, being careful not to burn it. Pour in the remaining chicken broth and bring it to a simmer, scraping any browned bits from the bottom of the skillet for extra flavor. Next, stir in the heavy cream and allow the mixture to simmer for another 3-4 minutes, until the sauce starts to thicken slightly.

          Combine Everything: Lower the heat to low, then return the cooked chicken and broccoli to the skillet. Sprinkle in the shredded mozzarella cheese and stir gently until the cheese is melted and the dish is well combined. Taste and adjust the seasoning with additional salt and pepper if desired.
