1 lb (450g) ground chicken

1/2 cup panko breadcrumbs (for an extra crunch)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

1 clove garlic, minced

1 large egg

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/2 teaspoon onion powder

1/2 teaspoon dried Italian seasoning

3 tablespoons unsalted butter

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 teaspoon Dijon mustard

Salt and freshly ground pepper, to taste

Fresh parsley, chopped for garnish (optional)

Make the Meatballs:

    In a large mixing bowl, combine the ground chicken, panko breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, egg, salt, black pepper, onion powder, and Italian seasoning. Blend the ingredients gently using your hands or a spatula until everything is evenly mixed—avoid overmixing to keep the meatballs tender.

      Form the Meatballs:

        With slightly moistened hands, scoop and roll the mixture into meatballs, approximately 1.5 inches in diameter. Arrange them on a parchment-lined baking sheet or plate to keep them from sticking.
