Ingredients

3 large cucumbers, thinly sliced

1 cup plain Greek yogurt

1/2 cup sour cream

2 tablespoons fresh dill, finely chopped (or 1 tablespoon dried dill)

1 tablespoon freshly squeezed lemon juice

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt (adjust to taste)

1/2 teaspoon freshly ground black pepper

1/4 cup red onion, finely chopped (optional)

Instructions

Prepare the Cucumbers: Begin by rinsing the cucumbers under cool running water to remove any dirt. Use a sharp knife or a mandoline slicer to cut them into thin slices, achieving even thickness for optimal texture. Depending on your personal preference, you can choose to peel some or all of the cucumbers.

Make the Dressing: In a large mixing bowl, combine the plain Greek yogurt and sour cream. Add the fresh dill, lemon juice, garlic powder, onion powder, salt, and black pepper. Use a whisk to blend the mixture until it is smooth and creamy. Taste the dressing and adjust the seasoning to your liking, adding more salt or pepper if necessary.

Combine Ingredients: Add the sliced cucumbers to the bowl containing the dressing. If you like a little bite, sprinkle in the finely chopped red onion. Gently toss everything together until the cucumber slices are fully coated in the creamy dressing.

Chill: Cover the salad with plastic wrap or transfer it to an airtight container. Place it in the refrigerator for at least 1 hour. This chilling time will allow the flavors to meld beautifully and give the cucumbers a chance to soften slightly.

Serve: Before serving, give the salad a gentle stir to redistribute the dressing. Taste once more and adjust the seasonings if desired. For an extra touch, garnish with additional fresh dill on top and enjoy this refreshing dish!
