8 oz (225g) pasta of your choice (penne or fusilli recommended)

1 cup fresh or frozen corn kernels

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

1 cup vegetable or chicken broth

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1/4 cup fresh basil, chopped (plus extra for garnish)

Zest of 1 lemon

Crushed red pepper flakes (optional, for extra heat)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Before draining, reserve 1/2 cup of the pasta water, then drain the pasta and set it aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes, or until it becomes translucent. Stir in the minced garlic and continue to cook for an additional 30 seconds until aromatic.

      Add the Corn: Incorporate the corn kernels into the skillet, stirring occasionally, and sauté for an additional 2-3 minutes to allow the corn to soften a bit.

        Prepare the Cream Sauce: Pour in the vegetable or chicken broth and bring the mixture to a simmer. Cook for about 5 minutes to let it reduce slightly. Next, stir in the heavy cream, salt, black pepper, and smoked paprika. Let it simmer for 2-3 minutes to blend the flavors together.

          Combine with Pasta: Add the cooked pasta directly to the skillet, tossing gently to ensure that it is well coated in the creamy sauce. If the sauce seems too thick, gradually add the reserved pasta water until the desired consistency is achieved.
