1 lb (450 g) boneless, skinless chicken breasts, diced into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 cup (240 ml) chicken broth (low-sodium preferred)

1 cup (240 ml) heavy cream

1 cup (about 80 g) fresh spinach leaves, roughly chopped

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional, for heat)

1/2 cup (50 g) grated Parmesan cheese, plus extra for serving

Salt and freshly cracked black pepper to taste

Fresh basil leaves for garnish (optional)

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the fettuccine or linguine and cook according to the package instructions until al dente, typically 8-10 minutes. Drain the pasta and set aside, reserving a splash of pasta water in case you need to loosen the sauce.

    Sauté the Chicken: Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the diced chicken, seasoning it generously with salt and black pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown on the outside and fully cooked through. Remove the chicken from the skillet and set it aside on a plate.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds, or until fragrant. Be careful not to burn the garlic. Pour in the chicken broth and bring it to a gentle simmer.
