8 oz (225g) penne pasta

2 cups cooked chicken, shredded

3 cups fresh spinach leaves

2 cups ricotta cheese

1 cup grated mozzarella cheese, divided

1/2 cup grated Parmesan cheese

2 cups marinara sauce (store-bought or homemade)

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, add water and a generous amount of salt. Bring it to a boil, then add the penne pasta. Cook according to the package instructions until it is al dente. Once done, drain the pasta and set it aside.

      Sauté the Spinach and Garlic: In a large skillet over medium heat, add the olive oil. Once hot, throw in the minced garlic and sauté for about 30 seconds or until it becomes fragrant. Next, add the fresh spinach and cook for about 2-3 minutes, stirring occasionally, until the spinach is wilted. Season the mixture with salt and pepper to taste.

        Mix the Sauce: In a large mixing bowl, combine the ricotta cheese, marinara sauce, dried oregano, dried basil, and red pepper flakes (if using). Add the shredded cooked chicken and stir until all the ingredients are well blended.

          Combine Everything: Gently fold the cooked pasta and the sautéed spinach into the sauce mixture, ensuring that every piece of pasta is evenly coated with the creamy sauce.

            Assemble the Bake: Grease a 9x13-inch baking dish. Transfer half of the pasta mixture into the dish and sprinkle half of the grated mozzarella cheese on top. Layer the remaining pasta mixture over it, followed by the rest of the mozzarella cheese and the grated Parmesan.

              Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then remove the foil and continue to bake for an additional 10-15 minutes, or until the top is golden brown and bubbly.
