Ingredients

2 cups cooked chicken, shredded (rotisserie chicken works great!)

1 cup sweet corn (can be fresh, frozen, or canned)

1 medium onion, diced finely

2 cloves garlic, minced

2 medium carrots, diced into small pieces

2 stalks celery, diced

4 cups low-sodium chicken broth

1 cup heavy cream

2 tablespoons butter

1 teaspoon dried thyme

½ teaspoon paprika

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Vegetables: In a large pot, melt the butter over medium heat. Add the finely diced onion, carrots, and celery. Sauté for about 5-7 minutes, stirring occasionally, until the onions are translucent and the vegetables are tender. Add the minced garlic and cook for an additional minute until fragrant, being careful not to let it brown.

Add Broth and Chicken: Slowly pour in the chicken broth, and then add the shredded chicken and sweet corn. Sprinkle in the dried thyme and paprika. Stir everything together until combined. Increase the heat to bring the soup to a gentle boil, then immediately reduce it to a simmer.

Let it Simmer: Allow the soup to simmer uncovered for about 20 minutes. This simmering process is essential as it helps meld the flavors together beautifully and thickens the soup slightly.

Incorporate Cream: After the simmering time, stir in the heavy cream until incorporated. Let the soup warm through for an additional 5-10 minutes. For a thicker consistency, you may use an immersion blender to carefully blend a portion of the soup, creating a creamier texture while still retaining some chunky elements.

Season: Taste your soup and adjust the seasoning by adding salt and black pepper to your liking. If you want to enhance the flavor, feel free to add extra herbs or a dash of your favorite spices.

Serve: Spoon the creamy soup into bowls and garnish each serving with a generous sprinkle of freshly chopped parsley. Enjoy your luscious, comforting chicken and corn soup while it's warm!
