Creamy Chicken and Broccoli One-Pot Pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced into bite-sized pieces

2 cloves garlic, finely minced

1 teaspoon Italian seasoning

Salt and freshly ground black pepper to taste

4 cups low-sodium chicken broth

8 ounces penne pasta (or your preferred pasta variety)

2 cups fresh broccoli florets

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Fresh basil or parsley, chopped, for garnish

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the diced chicken pieces, seasoning them with salt, pepper, and Italian seasoning. Cook until the chicken is golden brown and fully cooked, approximately 5-7 minutes. After cooking, remove the chicken from the pot and set aside on a plate.

    In the same pot, without cleaning it, add the minced garlic. Sauté the garlic for about 30 seconds, stirring constantly until it becomes fragrant and golden. Be careful not to burn it.

      Pour in the chicken broth, ensuring to scrape any browned bits off the bottom of the pot for added flavor. Add the penne pasta, then bring the mixture to a rolling boil. Once boiling, reduce the heat to a gentle simmer. Cook the pasta according to the package instructions, typically around 10-12 minutes, stirring occasionally to prevent sticking.

        When there are about 3 minutes remaining in the pasta's cooking time, add the fresh broccoli florets to the pot. This cooking method allows the broccoli to steam and soften without becoming mushy.

          Once both the pasta and broccoli are cooked to your liking, lower the heat and stir in the heavy cream and grated Parmesan cheese. Mix the ingredients well until the cheese is fully melted, creating a luscious and creamy sauce.

            Return the cooked chicken to the pot, stirring to incorporate it with the pasta and sauce. Allow everything to heat together for an additional 2-3 minutes. Taste and adjust seasoning with extra salt and pepper if needed.

              Remove the pot from heat and let it rest for a couple of minutes. Serve the creamy pasta hot, garnished with a sprinkle of fresh basil or parsley for a vibrant touch.
