Ingredients

12 oz fettuccine pasta

2 boneless, skinless chicken breasts (approximately 1 lb)

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 cup fresh spinach (optional)

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Additional Parmesan cheese for serving

Instructions

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the fettuccine and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of the starchy pasta water, then drain the pasta and set it aside.

Season the Chicken: While the pasta is cooking, generously season both sides of the chicken breasts with salt and freshly cracked pepper.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts, cooking them for approximately 6-7 minutes on each side. They should develop a rich golden-brown crust and reach an internal temperature of 165°F. Once cooked, remove the chicken from the skillet and allow it to rest for 5 minutes before slicing into strips.

Prepare the Alfredo Sauce: In the same skillet used to cook the chicken, reduce the heat to medium. Add the minced garlic and sauté for 30 seconds or until the garlic is fragrant but not burnt. Stir in the heavy cream, bringing it to a gentle simmer. Gradually whisk in the grated Parmesan cheese, stirring until it's completely melted and the sauce is smooth. If the sauce appears too thick, slowly add some of the reserved pasta water until you reach your desired consistency.

Combine: Add the drained fettuccine to the Alfredo sauce, tossing until the pasta is thoroughly coated. If you opted for spinach, stir it in along with the Italian seasoning, cooking until the spinach has wilted slightly.

Serve: Slice the rested chicken breasts and arrange them on top of the creamy Alfredo pasta. Garnish with freshly chopped parsley and an extra sprinkle of Parmesan cheese. Serve hot and relish the deliciousness!
