12 oz fettuccine pasta

2 boneless, skinless chicken breasts, sliced into strips

2 cups cremini mushrooms, sliced

4 cloves garlic, minced

1 cup heavy cream

1/2 cup balsamic vinegar

1/2 cup chicken broth

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

Fresh parsley, chopped (for garnish)

Optional: red pepper flakes (for a hint of heat)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Once cooked, drain the pasta and reserve about 1/2 cup of the pasta water, then set the pasta aside.

    Sauté the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced chicken to the skillet, seasoning it with salt and black pepper. Cook for approximately 6-8 minutes, or until the chicken is golden brown and fully cooked. Once done, remove the chicken from the skillet and place it on a plate to keep warm.

      Cook the Mushrooms: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced cremini mushrooms and sauté for about 4-5 minutes, or until they become soft and start to brown. Incorporate the minced garlic and sauté for an additional minute until fragrant.
