Creamy Baked Penne with Italian Sausage

12 oz penne pasta

1 lb Italian sausage (mild or spicy, casings removed)

1 medium onion, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 cup heavy cream

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese (divided)

½ cup grated Parmesan cheese

2 tsp Italian seasoning

1 tsp red pepper flakes (optional)

Salt and black pepper to taste

Fresh basil leaves for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) so it's ready for baking.

    Cook the Pasta: In a large pot, bring salted water to a rolling boil. Once boiling, add the penne pasta and cook until it reaches al dente texture as per the package instructions. Drain the pasta and set aside.

      Sauté the Sausage: Heat a large skillet over medium heat. Add the Italian sausage, using a wooden spoon to break it into smaller, bite-sized pieces. Sauté until the sausage is nicely browned and cooked through, which should take about 5-7 minutes.

        Incorporate Aromatics: Once the sausage is cooked, add the diced onion to the skillet. Cook for 3-4 minutes until the onion becomes translucent and softens. Then, add the minced garlic and sauté for an additional minute, allowing the garlic to become fragrant.

          Combine Ingredients: Stir in the drained diced tomatoes, heavy cream, ricotta cheese, Italian seasoning, and if desired, the red pepper flakes. Add ¾ cup of the shredded mozzarella cheese to the mixture. Stir everything together until well combined, and taste. Season with salt and black pepper as needed.
