Cold Sesame Chicken Noodles

For the Noodles:

8 oz. dried soba or rice noodles

1 tbsp sesame oil

1 tbsp vegetable oil

For the Chicken:

1 lb boneless, skinless chicken breasts

1/4 cup soy sauce

2 cloves garlic, minced

1-inch piece of fresh ginger, grated

1 tbsp honey (or maple syrup for a vegan option)

1 tsp rice vinegar

Salt and freshly ground black pepper, to taste

For the Dressing:

1/4 cup tahini (sesame paste)

2 tbsp soy sauce

2 tbsp rice vinegar

2 tbsp sesame oil

1 tbsp honey (or maple syrup)

1/2 tsp red pepper flakes (adjust according to spice preference)

1-2 tbsp water (for desired dressing consistency)

Toppings:

2 green onions, thinly sliced

1/4 cup fresh cilantro, chopped

2 tbsp toasted sesame seeds

1/2 cucumber, julienned

1 large carrot, grated

Instructions
 

Cook the Noodles: Fill a large pot with water, add a pinch of salt, and bring it to a rolling boil. Once boiling, add the dried soba or rice noodles and cook according to the package instructions until they reach an al dente texture. Drain the noodles and immediately rinse them under cold running water to halt the cooking process. After rinsing, drizzle the noodles with sesame oil and vegetable oil, tossing gently to prevent them from sticking together. Set aside.

    Marinate the Chicken: In a mixing bowl, combine the soy sauce, minced garlic, grated ginger, honey, rice vinegar, and a pinch of salt and pepper. Stir until well mixed. Add the chicken breasts to the bowl and ensure they're fully coated in the marinade. Cover the bowl and let it marinate for at least 30 minutes (up to 2 hours in the refrigerator for enhanced flavor).

      Cook the Chicken: Preheat a grill pan or skillet over medium heat. Once hot, add the marinated chicken breasts, cooking for approximately 5-7 minutes on each side or until the meat is fully cooked through and no longer pink in the center. Once cooked, transfer the chicken to a cutting board and allow it to rest for 5 minutes before slicing into thin strips.

        Make the Dressing: In a small bowl, whisk together the tahini, soy sauce, rice vinegar, sesame oil, honey, and red pepper flakes. Gradually add the water, whisking until you achieve a smooth and creamy consistency. Adjust the amount of water if necessary, depending on how thick or thin you prefer the dressing.

          Assemble the Dish: In a large mixing bowl, combine the cooled noodles with the sliced chicken and dressing. Gently toss the mixture until the noodles and chicken are well coated with the dressing.

            Serve: Divide the noodle and chicken mixture evenly among serving plates. Generously top each portion with sliced green onions, chopped cilantro, toasted sesame seeds, julienned cucumber, and freshly grated carrot. If desired, drizzle a little extra dressing over the top before serving.

              Chill (Optional): For an especially refreshing meal, cover the assembled noodles and refrigerate for 15-30 minutes prior to serving.
