Ingredients

12 ounces of your preferred pasta (such as farfalle, fusilli, or penne)

1 cup fresh basil leaves, packed tightly

1/2 cup grated Parmesan cheese

1/3 cup pine nuts (or use walnuts as a more budget-friendly alternative)

2 cloves garlic, minced

1/2 cup extra virgin olive oil

Salt and freshly cracked black pepper, to taste

1 pint cherry tomatoes, halved

1 cup arugula or baby spinach (optional but recommended for added freshness)

Zest and juice of 1 lemon

Fresh basil leaves, for garnish

Additional grated Parmesan for serving

Instructions

Cook the Pasta:

    - Fill a large pot with water, add a generous amount of salt, and bring it to a rolling boil. Add the pasta and cook according to the package directions until al dente. Once cooked, drain the pasta in a colander and rinse it under cold running water to halt the cooking process. Ensure it is well-drained before setting aside.

      Prepare the Pesto:

        - In a food processor, combine the packed basil leaves, grated Parmesan cheese, pine nuts, minced garlic, lemon zest, and a pinch of both salt and pepper. Pulse until all ingredients are well blended.

          - While the food processor is running, gradually drizzle in the extra virgin olive oil until the pesto achieves a smooth and creamy consistency. Taste the pesto and adjust the seasoning, adding more salt and pepper as needed.

            Combine Pasta and Pesto:

              - In a large mixing bowl, add the cooled pasta. Pour the prepared pesto over the pasta and gently toss until the pasta is evenly coated. If you find the pesto is too thick, you can add a small amount of water or additional olive oil to achieve your desired consistency.

                Add Cherry Tomatoes and Arugula:

                  - Carefully fold in the halved cherry tomatoes and arugula (if using) to the pasta mixture. These ingredients will provide a refreshing burst of flavor and vibrant color.

                    Season and Chill:

                      - Squeeze the fresh lemon juice over the pasta, giving it a final gentle toss to mix. Taste the dish and make any necessary seasoning adjustments. Cover the bowl and place it in the refrigerator to chill for at least 30 minutes before serving.

                        Serve and Enjoy:

                          - When you’re ready to serve, remove the pasta from the fridge and garnish with additional grated Parmesan and fresh basil leaves for an appealing presentation. This chilled pesto pasta makes for a perfect light lunch, a side dish, or a delightful option for picnics. Relish the harmonious blend of flavors and the refreshing sweetness of the cherry tomatoes!
