2 cups rotini pasta (whole wheat or regular)

1 cup cooked chicken breast, diced into bite-sized pieces

1 cup cherry tomatoes, halved

1 cucumber, peeled and diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon freshly squeezed lemon juice

1 teaspoon dried oregano

Salt and freshly ground black pepper to taste

Instructions
 

Cook the Pasta:

    In a large pot, bring a generous amount of salted water to a rolling boil. Add the rotini pasta and cook according to the package instructions until al dente, typically around 8-10 minutes. Once cooked, drain the pasta and rinse it under cold running water to halt the cooking process. Set aside to cool completely.

      Prepare the Dressing:
