Ingredients

2 large cucumbers, thinly sliced

8 oz cream cheese, softened at room temperature

1/4 cup sour cream

2 tablespoons fresh dill, finely chopped (plus extra for garnish)

1 tablespoon fresh lemon juice

1 teaspoon garlic powder

Salt and freshly ground black pepper to taste

8 slices of whole-grain or rye bread

Optional: 4-8 lettuce leaves (such as butter or romaine) for added crunch

Instructions

Prepare the Spread: In a medium mixing bowl, combine the softened cream cheese and sour cream. Add the chopped dill, lemon juice, garlic powder, and a pinch of salt and black pepper. Use a spatula or a hand mixer to blend the mixture until it is smooth and creamy, making sure all ingredients are well incorporated.

Assemble the Sandwiches: Lay out the bread slices side by side on a clean, flat surface. If you'd like to add a layer of freshness, place one lettuce leaf on four of the slices, ensuring they cover the surface well.

Spread the Mixture: Carefully spread a generous amount of the cream cheese mixture on the exposed side of each bread slice, including the lettuce layer where applicable. Ensure even coverage to maximize flavor in each bite.

Add the Cucumbers: Evenly arrange the thinly sliced cucumbers over the cream cheese spread on every sandwich. For an attractive look, slightly overlap the cucumber slices as you layer them.

Top It Off: Take the remaining slices of bread and place them on top of the cucumber-laden slices, ensuring the cream cheese side faces down. Gently press down to lock the sandwich layers together.

Cut & Serve: Trim off the crusts of each sandwich for a refined tea sandwich appearance. Cut each sandwich into quarters for bite-sized pieces, or halves according to your preference. For a charming presentation, sprinkle additional dill on top of each sandwich.

Chill (Optional): To enhance the refreshing aspect, cover the sandwiches with plastic wrap and refrigerate for about 30 minutes before serving. This allows the flavors to meld and results in a cooler, crisper bite.
