Ingredients

For the Meatloaf:

1 lb ground beef (preferably 80/20 for flavor)

1/2 lb ground pork (adds moisture)

1 cup breadcrumbs (seasoned or plain)

1 small onion, finely chopped

2 cloves garlic, minced

1 large egg, beaten

1/2 cup milk

1 tsp Worcestershire sauce

1 tsp salt

1/2 tsp freshly ground black pepper

1 tsp dried thyme

1 tsp dried parsley

1/4 cup ketchup (plus extra for glazing)

For the Mashed Potatoes:

2 lbs russet potatoes, peeled and cut into uniform chunks

1/2 cup unsalted butter (plus extra for serving)

1/2 cup milk (or heavy cream for extra richness)

Salt and freshly cracked pepper to taste

Fresh chives, chopped (for garnish)

Instructions

Preheat the Oven: Set your oven to 350°F (175°C) to ensure it’s hot and ready for baking.

Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, chopped onion, minced garlic, beaten egg, milk, Worcestershire sauce, salt, black pepper, thyme, parsley, and 1/4 cup ketchup. Mix gently with your hands or a spoon until just combined; be careful not to overmix to keep the meatloaf tender.

Shape the Meatloaf: Transfer the meat mixture to a lightly greased loaf pan or shape it into a loaf by hand on a baking sheet lined with parchment paper. For a glossy finish, brush the top generously with additional ketchup.

Bake the Meatloaf: Place the meatloaf into the preheated oven and bake for 1 hour, or until its internal temperature reaches 160°F (70°C). Once done, allow it to rest for 10 minutes before slicing to ensure juiciness.

Cook the Mashed Potatoes: While the meatloaf is baking, fill a large pot with salted water and bring it to a boil. Add the potato chunks and cook until they are fork-tender, around 15-20 minutes.

Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Add in the butter and milk (or heavy cream), then mash using a potato masher or a ricer until you achieve a smooth and creamy texture. Season with salt and pepper to your taste.

Serve: Slice the flavorful meatloaf and serve it alongside a generous heap of buttery mashed potatoes. To elevate the presentation, garnish the potatoes with freshly chopped chives and drizzle some additional melted butter over the top, if desired.
