2 cups cauliflower florets

1 cup carrots, chopped

4 cups vegetable broth

2 tbsp unsalted butter

2 tbsp all-purpose flour

2 cups shredded sharp cheddar cheese

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

½ cup breadcrumbs (optional, for topping)

2 tbsp olive oil (optional, for topping)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente, usually around 8-10 minutes. Once cooked, drain the pasta in a colander and set it aside.
