Ingredients

1 cup semi-sweet chocolate chips

½ cup (1 stick) unsalted butter

½ cup creamy peanut butter

1 cup powdered sugar

2 large eggs

2 large egg yolks

1 teaspoon pure vanilla extract

½ cup all-purpose flour

1 pinch of salt

Cooking spray or additional butter for greasing the ramekins

Optional: Ice cream or whipped cream for serving

Instructions

Preheat & Prepare Ramekins: Begin by preheating your oven to 425°F (220°C). Take four 6-ounce ramekins and generously grease them with cooking spray or softened butter. Arrange the greased ramekins on a baking sheet, which will make transferring them to and from the oven much easier.

Melt Chocolate & Butter: In a medium saucepan set over low heat, combine the semi-sweet chocolate chips and unsalted butter. Stir continuously until the mixture is completely melted and smooth. Once melted, take it off the heat and let it cool for a few minutes.

Incorporate Peanut Butter: After cooling slightly, add the creamy peanut butter to the melted chocolate mixture. Mix thoroughly until you achieve a silky and homogenous blend.

Whisk Wet Ingredients: In a separate mixing bowl, whisk together the eggs, egg yolks, and pure vanilla extract until well combined. Gradually introduce this egg mixture into the warm chocolate-peanut butter concoction, stirring gently to integrate all the ingredients.

Combine Dry Ingredients: Sift the powdered sugar and all-purpose flour into the chocolate mixture, adding a pinch of salt for balance. Gently fold the dry ingredients into the wet mixture until just combined; be cautious not to overmix, as this can affect the texture of the lava cake.

Fill Ramekins: Carefully pour the batter into each prepared ramekin, filling them about three-quarters full to ensure room for the gooey lava center. For an extra touch, you may place a few chocolate chips or a small dollop of peanut butter in the center of each ramekin for a deliciously oozy surprise.

Bake: Place the baking sheet with the filled ramekins in the preheated oven. Bake for 12-14 minutes, or until the edges appear firm while the center remains soft and slightly jiggly.

Cool & Serve: Once done baking, let the cakes cool for about 1 minute. Use a knife to carefully run around the edges of each ramekin to loosen the cake. Invert each ramekin onto a dessert plate, gently lifting off to unveil the luscious lava cake. For the perfect indulgent treat, serve immediately topped with a scoop of ice cream or a dollop of whipped cream.
