1 cup couscous

1 1/4 cups boiling vegetable broth

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon lemon zest

Salt and pepper, to taste

Prepare the Couscous: In a medium-sized bowl, place the couscous. Pour the boiling vegetable broth over the couscous, ensuring all the grains are submerged. Cover the bowl with a lid or a sheet of plastic wrap and let it sit undisturbed for about 5 minutes until the liquid is fully absorbed. Once done, use a fork to fluff the couscous gently, then set it aside to cool completely.

    Chop the Vegetables: While the couscous is cooling, take the time to prepare your fresh vegetables. Halve the cherry tomatoes, peel and dice the cucumber into small chunks, and finely chop the red onion.

      Combine Ingredients: In a large mixing bowl, combine the cooled couscous with the halved cherry tomatoes, diced cucumber, chopped red onion, halved kalamata olives, crumbled feta cheese, fresh parsley, and mint. Gently mix to distribute the ingredients evenly.

        Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, grated lemon zest, and a pinch of salt and pepper. Taste the dressing and adjust the seasoning if necessary, ensuring it is well balanced.
