Ingredients

4 large russet potatoes, cut into thin fries

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper, to taste

1 can (15 oz) kidney beans, rinsed and drained

1 cup canned diced tomatoes, drained

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon ground cumin

1 cup shredded cheddar cheese (or vegan cheese for a plant-based option)

1/4 cup fresh cilantro, chopped (for garnish)

1 avocado, diced (for topping)

Instructions

Prepare the Fries:

    - Preheat your oven to 425°F (220°C).

      - In a large mixing bowl, add the cut fries, drizzle with olive oil, and sprinkle with paprika, garlic powder, salt, and pepper. Toss well until the fries are evenly coated.

        - Spread the seasoned fries in a single, even layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping them halfway through, until they are golden brown and crispy.

          Make the Chili:

            - While the fries are baking, prepare the chili. In a medium-sized saucepan, heat a splash of olive oil over medium heat.

              - Add the finely chopped onion and sauté for about 3-4 minutes, or until the onion becomes translucent.

                - Stir in the minced garlic and cook for an additional minute, until fragrant.

                  - Add the rinsed kidney beans, drained diced tomatoes, chili powder, cumin, and a pinch of salt and pepper. Stir to combine and bring to a gentle simmer. Let the mixture cook for about 10-15 minutes, stirring occasionally, allowing the flavors to meld together.

                    Assemble:

                      - Once the fries are cooked, remove them from the oven and arrange them on a large serving platter.

                        - Generously spoon the chili mixture over the hot fries, ensuring they are well-covered for maximum flavor.

                          - Sprinkle the shredded cheese evenly on top of the chili. Return the platter to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

                            Garnish and Serve:

                              - Carefully take the platter out of the oven. Top the cheesy chili fries with freshly chopped cilantro and diced avocado for a refreshing finish.

                                - Serve immediately while hot and gooey for the best experience!

                                  Prep Time: 15 minutes | Total Time: 50 minutes | Servings: 4

Optional Presentation Tips: For an attractive presentation, serve the fries in individual bowls, layering the chili and cheese artfully. Garnish each bowl with a sprinkle of cilantro and a few pieces of avocado. Consider adding a wedge of lime on the side for an extra touch of zest.
