1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

2 tablespoons olive oil

1 tablespoon soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper, to taste

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

For the Peach Salsa:

2 ripe peaches, diced

1/2 small red onion, finely chopped

1 jalapeño, seeds removed and minced (or adjust to taste)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

Marinate the Chicken:

    In a medium mixing bowl, whisk together the olive oil, soy sauce, honey, minced garlic, smoked paprika, ground cumin, and a pinch of salt and pepper. Add the chicken cubes to the mixture and toss until each piece is evenly coated.       Prepare the Peach Salsa:

        While the chicken marinates, combine the diced peaches, finely chopped red onion, minced jalapeño, and chopped cilantro in a separate bowl.
