Ingredients

20 jumbo pasta shells

2 cups fresh spinach, finely chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

1/2 cup grated Parmesan cheese

1 large egg, beaten

2 cloves garlic, minced

1 teaspoon onion powder

1/2 teaspoon Italian seasoning

Salt and black pepper to taste

3 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure even cooking.

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Carefully add the jumbo pasta shells, cooking them according to the package instructions until they are al dente. Once cooked, drain them thoroughly and set aside to cool slightly.

Prepare the Filling: In a spacious mixing bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella cheese, grated Parmesan cheese, beaten egg, minced garlic, onion powder, Italian seasoning, and a pinch of salt and pepper. Stir everything together until the mixture is well blended and creamy.

Stuff the Shells: Using a spoon, take each cooked shell and gently fill it with the spinach and cheese mixture. Place the stuffed shells seam-side up in a generously greased large baking dish.

Add the Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring each shell is well covered. Then, sprinkle the remaining mozzarella cheese on top for that extra cheesy goodness.

Bake: Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 25 minutes. After this initial baking, carefully remove the foil and continue to bake for an additional 10-15 minutes, or until the cheese is melty, bubbly, and golden brown.

Garnish and Serve: Once baked, remove the dish from the oven and let it cool for a few minutes. Before serving, sprinkle fresh basil leaves over the top for a pop of color and flavor.
