Ingredients

1 pre-made pie crust (store-bought or homemade)

2 cups fresh spinach, chopped

1 cup mushrooms, sliced (white or cremini)

1 small onion, diced

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

4 large eggs

1 cup heavy cream (or half-and-half for a lighter option)

1/2 tsp garlic powder

1/2 tsp ground nutmeg

Salt and pepper to taste

2 tbsp olive oil or butter (for sautéing)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it’s hot enough for baking the quiche.

Prepare the Pie Crust: Carefully place the pie crust into a 9-inch pie dish. Press it down gently to fit the dish, making sure the edges are neatly crimped. Use a fork to prick the bottom of the crust to prevent it from bubbling up during baking, then set the dish aside.

Sauté the Vegetables: In a medium skillet, heat the olive oil or butter over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant. Next, introduce the sliced mushrooms into the skillet and continue to cook for an additional 5 minutes, stirring occasionally, until they are golden brown. Finally, add the chopped spinach, stirring until it wilts, approximately 2 minutes. Remove from heat and allow cooling slightly.

Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, heavy cream (or half-and-half), garlic powder, ground nutmeg, salt, and pepper. Whisk until the mixture is smooth and evenly blended.

Combine Ingredients: Gently fold the sautéed vegetable mixture into the egg mixture. Then, add the shredded mozzarella and grated Parmesan cheese, mixing well to ensure every ingredient is evenly distributed throughout the filling.

Fill the Crust: Carefully pour the vegetable and cheese filling into the prepared pie crust. Use a spatula to spread and level the mixture evenly across the crust.

Bake the Quiche: Place the filled quiche in the preheated oven and bake for approximately 35-40 minutes. The quiche is done when the filling is set in the center and the top is lightly golden.

Cool and Serve: Once baked, remove the quiche from the oven and allow it to cool for about 10 minutes. This cooling period will help it set for easier slicing. Serve warm or at room temperature, and enjoy this delightful cheesy spinach and mushroom quiche!

Prep Time: 15 minutes | Total Time: 55 minutes | Servings: 8 slices

Presentation Tips: For an elegant touch, sprinkle a bit of fresh parsley or basil on top just before serving. Slice the quiche into wedges and serve on individual plates, alongside a light salad for a complete meal.
