8 oz (approximately 2 cups) penne pasta

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (around 2 cups) cremini or button mushrooms, sliced

4 cups fresh spinach (or 1 cup frozen spinach, thawed and drained)

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

1 cup ricotta cheese

1 cup grated mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1/2 teaspoon red pepper flakes (optional for spice)

2 cups marinara sauce

Fresh basil or parsley, chopped, for garnish

Cook the Pasta: Begin by preheating your oven to 375°F (190°C). In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain the pasta and set it aside in a large mixing bowl.

    Sauté Vegetables: In a large skillet over medium heat, warm the olive oil. Add the chopped onion and sauté until it becomes translucent, which should take about 4-5 minutes. Incorporate the minced garlic and sauté for an additional minute until fragrant, taking care not to burn it.

      Add Mushrooms and Spinach: To the skillet, add the sliced mushrooms and cook until they become tender and release their moisture, about 5-7 minutes. Once the mushrooms are ready, stir in the fresh spinach and cook until wilted. Season the mixture with oregano, thyme, salt, and pepper. If you enjoy a bit of heat, mix in the red pepper flakes.
