Cheesy Spinach and Artichoke Quesadillas

1 cup fresh spinach, finely chopped

1 cup canned artichoke hearts, drained and coarsely chopped

1 cup cream cheese, softened to room temperature

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper, to taste

4 large, soft flour tortillas

2 tablespoons olive oil

Optional: Fresh cilantro, chopped, for garnish

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the softened cream cheese, finely chopped spinach, coarsely chopped artichokes, minced garlic, shredded mozzarella, grated Parmesan cheese, smoked paprika, and a pinch of salt and pepper. Mix everything together thoroughly until the ingredients are well blended and creamy.

    Heat the Pan: Place a large skillet over medium heat and add 1 tablespoon of olive oil. Allow the oil to heat until shimmering but not smoking.

      Assemble Quesadillas: Carefully place one flour tortilla in the skillet. Using a spatula, spread a generous layer of the cheese and spinach filling over half of the tortilla. Fold the unfilled half over the filling to create a half-moon shape, pressing lightly to secure the edges.

        Cook the Quesadilla: Cook the quesadilla for about 3-4 minutes, or until the bottom is golden brown and the cheese begins to melt. Gently flip the quesadilla using the spatula and cook for another 3-4 minutes on the opposite side, until golden and crispy.

          Repeat: Once cooked, remove the quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining tortillas and filling, adding more olive oil to the skillet as necessary to prevent sticking.

            Serve: Slice each quesadilla into wedges and arrange them on a serving platter. If desired, garnish with fresh chopped cilantro for a pop of color. Serve with your favorite salsa or a dollop of sour cream on the side for dipping.
