Ingredients

8 oz cream cheese, softened to room temperature

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (4 oz) diced green chilies, thoroughly drained

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper, to taste

4 large flour tortillas (10-inch size)

½ cup fresh cilantro, finely chopped (optional for garnish)

1 cup sour cream (for dipping)

Instructions

Prepare the Cheese Mixture: In a large mixing bowl, blend together the softened cream cheese, shredded sharp cheddar cheese, and shredded Monterey Jack cheese until smooth and creamy. Then, mix in the drained diced green chilies, garlic powder, onion powder, smoked paprika, and season with salt and pepper. Stir until all ingredients are well combined.

Spread the Mixture: Lay one tortilla flat on a clean surface. Using a spatula or the back of a spoon, evenly spread approximately ¼ of the cheese mixture across the surface of the tortilla, leaving about a ½-inch border around the edges to prevent overflow.

Add Optional Cilantro: For a fresh touch, sprinkle some finely chopped cilantro over the cheese mixture before rolling. This adds a burst of flavor and color.

Roll It Up: Starting at one end of the tortilla, carefully and tightly roll it into a log shape. Make sure to roll uniformly for even pinwheel slices. Repeat this process for the remaining tortillas until all the filling is used.

Chill the Rolls: Wrap each rolled tortilla log in plastic wrap and refrigerate for at least 1 hour. Chilling will help firm them up, making slicing easier and cleaner.

Slice the Pinwheels: After the rolls have chilled, unwrap them and transfer each roll to a cutting board. Using a sharp knife, slice each roll into pinwheels that are about 1-inch thick. Repeat this cutting process for all rolls.

Serve with Dipping Sauce: Arrange the pinwheel bites artfully on a serving platter. Accompany them with a small bowl of sour cream on the side for dipping.
