Ingredients

2 cups cooked white rice

2 cups cooked chicken, shredded or diced

3 cups fresh broccoli florets (or 2 cups frozen broccoli, thawed and drained)

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 can (10.5 oz) cream of mushroom soup

1 cup chicken broth

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 teaspoon paprika (optional, for color)

1/4 cup bread crumbs (optional, for topping)

1 tablespoon olive oil (optional, to crisp up breadcrumbs)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

Prepare the Broccoli: If using fresh broccoli, steam the florets until they turn bright green and tender, which should take about 3-4 minutes. For frozen broccoli, ensure it is fully thawed and drained of excess moisture. Set aside once prepared.

Mix the Base: In a large mixing bowl, combine the cooked rice, diced or shredded chicken, steamed broccoli, cream of mushroom soup, chicken broth, and milk. Stir everything together until the mixture is uniformly blended.

Season It Up: Add in the garlic powder, onion powder, salt, pepper, and paprika (if using). Mix well to incorporate all the seasonings. Taste your mixture and adjust the seasonings as necessary for your preferences.

Add Cheese: Gently fold in the shredded sharp cheddar and mozzarella cheese, making sure to save a small amount of each cheese for topping the casserole later.

Transfer to Baking Dish: Pour the fully mixed casserole filling into a greased 9x13 inch baking dish. Spread the mixture out evenly across the dish to ensure even cooking.

Add Toppings: Evenly sprinkle the reserved cheese over the top of the casserole. If you prefer a crispy topping, combine the breadcrumbs with the olive oil in a small bowl, then sprinkle this mixture over the cheese.

Bake: Place the casserole in your preheated oven and bake for 25-30 minutes, or until the cheese is fully melted and bubbly, and the top has turned a beautiful golden brown.

Serve: Carefully remove the casserole from the oven and let it cool for about 5 minutes before serving. This dish is at its best when enjoyed hot!
