1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

3 cloves garlic, minced

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1 tablespoon olive oil

1/2 cup milk

1/4 cup sour cream

1 cup crushed butter crackers (for topping, optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x13-inch casserole dish by greasing it with cooking spray or a light coating of butter.

    Prepare the Rice: In a medium saucepan, combine the long-grain white rice and vegetable broth. Bring this mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and allow it to simmer for 15-18 minutes until the rice is tender and the liquid is fully absorbed.

      Cook the Broccoli: While the rice cooks, fill a separate pot with water and bring it to a boil. Once boiling, carefully add the fresh broccoli florets. Blanch them for about 2-3 minutes until they turn bright green and are slightly tender. Drain the broccoli and quickly rinse it under cold water to halt the cooking process. Pat it dry and set aside.

        Sauté the Aromatics: In a large skillet over medium heat, pour in the olive oil. Once hot, add the finely chopped onion and sauté for 4-5 minutes until translucent. Incorporate the minced garlic and continue cooking for another minute, allowing the garlic to become fragrant.

          Combine the Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onion and garlic, blanched broccoli, shredded cheddar, mozzarella, and Parmesan cheeses, 1/2 cup of milk, sour cream, salt, black pepper, paprika, and garlic powder. Stir the mixture thoroughly to ensure that all ingredients are evenly incorporated.

            Transfer to Casserole Dish: Carefully pour the mixture into your prepared casserole dish, spreading it out evenly. If you like a crunchy topping, sprinkle the crushed butter crackers over the surface of the casserole.

              Bake the Casserole: Cover the casserole dish with aluminum foil and place it into the preheated oven. Bake for 25 minutes, then carefully remove the foil and continue to bake for another 10-15 minutes, or until the top is bubbly and golden brown.
