Charred Corn Chipotle Skewers

4 large ears of fresh corn, husked

1 cup cherry tomatoes, halved

1 red bell pepper, cut into 1-inch pieces

1 medium zucchini, sliced into ½-inch rounds

½ cup red onion, cut into 1-inch pieces

1 can (15 oz) black beans, rinsed and drained

3 tablespoons olive oil

2 tablespoons chipotle adobo sauce (from canned chipotle peppers)

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh lime wedges, for serving

Fresh cilantro, chopped, for garnish

Skewers (metal or soaked bamboo)

Instructions
 

Prepare the Corn: If not grilling whole, carefully cut the corn kernels off the cobs using a sharp knife. If desired, grill the corn ears first until they have a slight char, then remove the kernels and set them aside.

    Marinate the Vegetables: In a large mixing bowl, combine the corn kernels, halved cherry tomatoes, red bell pepper pieces, sliced zucchini, red onion chunks, and black beans. In a separate small bowl, whisk together the olive oil, chipotle adobo sauce, garlic powder, smoked paprika, salt, and pepper until well blended. Pour this marinade over the vegetable mixture and toss gently to ensure everything is evenly coated. Allow the mixture to marinate for at least 30 minutes at room temperature to enhance the flavors.

      Assemble the Skewers: Preheat your grill to medium-high heat. Take the marinated vegetable mixture and thread the ingredients onto the skewers, alternating between different vegetables to create an appealing and colorful array.

        Grill the Skewers: Place the assembled skewers on the preheated grill. Cook for approximately 10-12 minutes, turning occasionally to ensure even grilling. The vegetables should become tender and develop a nice char.

          Serve: Once grilled to perfection, remove the skewers from the grill and let them rest for a few minutes. Squeeze fresh lime juice generously over the skewers and garnish them with a sprinkle of chopped cilantro just before serving.
