Ingredients

2 large onions, thinly sliced

2 tablespoons olive oil

Salt, to taste

1 teaspoon sugar

1 teaspoon balsamic vinegar

1 cup feta cheese, crumbled

1 teaspoon dried oregano

1 teaspoon garlic powder

4 large flatbreads or naan

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for a spicy kick

Instructions

Caramelize the Onions: In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onions along with a pinch of salt. Sauté the onions for approximately 20-25 minutes, stirring occasionally to prevent sticking, until they become soft and turn a rich golden brown.

Enhance the Flavor: Once the onions are beautifully caramelized, sprinkle the sugar over them. Stir thoroughly to incorporate the sugar and allow it to dissolve. Continue cooking for an additional 2-3 minutes, until the onions glisten with sweetness. Add the balsamic vinegar for a tangy undertone, give it a final stir, and remove the pan from the heat.

Prepare the Filling: In a mixing bowl, combine the crumbled feta cheese, dried oregano, and garlic powder. Gently fold in the caramelized onions until the mixture is evenly distributed. Taste and adjust the seasoning with additional salt or pepper if desired.

Stuff the Flatbreads: Take each flatbread and spoon a generous portion of the onion and feta mixture into the center, leaving a border around the edges. Either fold the flatbread in half or roll it up tightly, pressing the edges to seal in the flavorful filling.

Cook the Flatbreads: Heat a clean skillet or griddle over medium heat and lightly brush the surface with oil. Place the stuffed flatbreads in the skillet and cook for about 3-4 minutes on each side, or until they are crispy and have a golden brown crust. If needed, press them down gently with a spatula to ensure even cooking.

Serve: After cooking, remove the flatbreads from the skillet and let them rest for about a minute. For an added touch, sprinkle with freshly chopped parsley and optional red pepper flakes for a spicy kick. Cut the flatbreads into halves or quarters for easy serving, and enjoy them warm!
